The difficulty in this subject is that most of the wine producers where I buy wine from (around 25) are “on allocation” and therefore do not welcome public and do not sell any wine to the public. You can taste these wines from the Elite of Burgundy producers by joining one of the prestigious tasting experiences I organize with my Kasteliades guests. Please contact me for more details at firstname.lastname@example.org
I have nevertheless selected a few producers underneath who welcome public on appointment and where you will receive a good welcome if your introduce yourself as Kasteliades guests. It is necessary to give a phone call or send a mail to take an appointment. The tastings at producers are free of charge or a small fee is required, but wine producers in general expect that you will buy some wine.
Please avoid Sundays and the time slot between and 12am and 2pm.

COOKING COURSE AND DINNER
Passion Cuisine is a well-known cooking school located in the village of Rully (near Chalon). It’s a very friendly concept where you prepare your own Gastronomic Menu under the supervision of a prestigious Chef and then you enjoy the Diner or Lunch in a relaxed atmosphere.
What will you enjoy during this great Experience ?
The Chef will teach you about some of his cooking and preparation tricks in a very friendly way. You will be equipped with apron, knives and all the individual equipment required for the course.
You will become a « confident » Chef by learning the different techniques (to be honest, when I had to translate this section in English language my ability reached its limits, so here it is in French J) : for example : blanchir, déglacer, mouiller, suer, pocher, saisir, émincer, découper en brunoise, mirepoix, julienne...
The kitchen is a professional kitchen like in a good quality restaurant. Once the course is finished the table in the middle of the Kitchen will be dressed and you will enjoy diner with what you have prepared.
Philippe the Chef and Jean-Pierre the wine Expert are a very friendly duo! Although Philipp’s English is not completely fluent he manages well to take care of foreign language speaking groups and Jean-Pierre helps ! Many of my Kasteliades guests from abroad, who did not speak a word of french, have enjoyed their cooking courses and said they had a great experience!

ORGANIZED BIKE TOUR AND WINE TASTING !
WITH FLORIAN FROM “BOURGOGNE EVASION”
I know, you will immediately think that cycling and wine tasting are not compatible…or that cycling is too hard for your perception of what should be a holiday.
But I can tell that this concept is really great fun guaranteed and open to “softies” :-) ! For the full day trip, the trick is that the minibus takes you to the top of a hill, so the ride is going down all the time…easy !
FLORIAN, YOUR BIKING AND WINE TASTING EXPERT GUIDE
Florian is an official cycling guide. He has a very good knowledge of the area and a passion for our region of Burgundy. Florian speaks very good English. He is a very friendly and helpful person and his cheerfulness will contribute to make your day great fun! Florian has a very good knowledge of Burgundy wines and wine tasting, so he will be also a good guide during wine cellar stops.
He prepared these bikes and wine tasting excursions especially for our guests, and he has a mini-bus to transport you from your Kasteliades Château to the cycling destination.
Since Florian accompanies his tours personally, there is no room for more than one group per day. This full day trip is very successful so we advise you to book several months in advance if possible. You benefit anyway from a “SUN GUARANTEE”. If the days before the planned trip there is a rainy weather forecast, then the trip will be either changed to another day or cancelled with absolutely no costs for you.
CHILDREN / TEENAGERS
Children are allowed from the age of 10. Specific bicycles are available for them. A discount of 10% on the adult price is granted to children and teenagers between the age of 10 and 16 included.
Very young children who can seat in a baby or child seat on a bicycle are permitted. Please ask more information about this.
HALF DAY TRIPS
Florian organizes as well various half day trips which do not include lunch and transfers. For example there is one starting from the Tourist Office in Beaune at 2pm lasting 3 hours. We pick you up at your Kasteliades Castle at 9AM* (please be ready). Our tour takes us into the vineyards of the Côte de Beaune starting from the top of a hill above St Romain. After a briefing about how to use the bicycle and adjust your helmet, we will be riding in the heart of the Burgundy wine region. Each sunday morning from 8am to 12am, the "place St Vincent" in Chalon sur Saône welcomes a market gathering exclusively local food producers such as jams, honey, fruits, vegetables,etc..
This "Place St Vincent" is one of the nicest area of Chalon, with its cathedrale and wanter fountain. I highly recommend you to visit this market, since it is at the begining of your holiday with us, it will be a good opportunity to fill up your fridge with hiigh quality local produces.

The market in Louhans takes place every Monday morning, from 8.30am to 12.30am. It is the biggest and most popular market in the whole region of Burgundy. Some people drive all the way from Switzerland to visit this market. In the summer it can attracts about 20.000 visitors.
The main pedestrian street is a classified historical monument with its 157 arcades. The market is divided in 2 sections, one with local producers and other stalls (in the Arcades street), and another part (on the market place) where farmers sell their alive animals (ducks, chickens, rabbits etc..) which is great fun for children.
Important advice: Arrive at the market before 8.30am (!!) and park just at the entrance of Louhans (coming from the North 100 meters before the roundabout, just after the Peugeot garage, there is a small parking place on your right, coming from the south park before the railway bridge). If you arrive after 9am, you will be stuck for a very long time in a huge traffic jam, and you will not find anywhere to park. So go early or don’t go !
Lunch : The restaurants in Louhans will be totally packed at lunch time and they will mostly serve a limited choice of dishes (all featuring “veal’s head” which is the local specialty but most non locals will not like it). So I recommend leaving Louhans to take lunch outside. Going North: “L’Eden Bar” in Simard is 10 minutes from Louhans. They make great pizzas and homemade burgers, as well as a menu of the day. Book your table (it is fully booked every Monday) at 0033 385 72 28 16.

1°) In the morning visit Tournus Abbaye in the center (it is one of the most beautiful in the region), the visit is free.
2°) For lunch take advantage of a "Michelin star" experience at less than 35 euros!
The 1* Michelin restaurant “Aux Terrasses” offers a great deal for Lunch from Tuesday to Friday: The “Menu du marché” for less than 35 Euros, The “degustation” menus are very reasonably priced (70 or 105 euros in 2020 for 6 or 9 courses). This is my favorite Michelin Starred restaurant in the region. The Chef (Jean-Michel Carrette) is brilliant, the service is perfect, the wine card is one of the best in Southern Burgundy at very reasonable prices compare to other Michelin starred.
This restaurant is highly popular and needs to be booked in advance. Recommend yourself from Kasteliades for the warmest welcome.

1°) Olivier Leflaive in Puligny-Montrachet is a well-known wine producer of the Cote de Beaune. They have their own particularly good restaurant in the center of Puligny-Montrachet offering a great concept of lunch combined with tasting of their wines and visit of vineyards + winery.
You can book this complete experience for 130 euros pp (in 2020). Available every day except Sunday & Wednesday. Or you can also just go there for lunch. (All details on their website).
9H45 : Meet at Olivier Leflaive restaurant. Guided walking tour among the World Heritage listed “climate” of Puligny-Montrachet (vineyards) accompanied by Oliver Leflaive Sommelier.
The sommelier will explain Terroir, Geology, climate, classification, viticulture in Burgundy...
11H20: Guided visit of the winery with explanations on harvest, fermentation, barrel aging and bottling. A glass of wine is offered during the visit (which you can keep and take away as a souvenir). Very often the winery commented visit is done by the owner himself.
12H30: Lunch + 6 wines at Olivier Leflaive restaurant. You can buy their wines to take away if you wish after lunch.

Famous for their auction of wines each year in November, the Hospices de Beaune is, with its marvelous varnished colored tile roof, one of the most famous sites to visit in Burgundy. Apart from its own history, which is fascinating, the Hospices de Beaune also houses some very fine paintings.

14th century mansion, the castle of Savigny les Beaune, its courtyard and its park, propose to you several museums in one! Hundreds of models: Abarth race cars, motorcycles, fighter jets and helicopters alongside the theme of firefighters, that of straddle tractors or that of wine and wine equipment …You can even taste the wines of the estate in the vault of the Little castle!

This is a family winery, two brothers, nephew and son taking care of the vineyards and vinification. Didier will welcome you in their wine tasting cellar. They offer a wide range of village, premier cru, and one grand cru wines (Bourgogne Aligoté, St Aubin, Puligny Montrachet, Corton grand Cru…). The first time I discovered this domain was having dinner at the Michelin 3 Stars restaurant LAMELOISE. Domain Larue has its wines on many wine cards from the top restaurants in France.

I thought I should write a section on my website to put together some good adresses for those who appreciate buying good quality food away from supermarkets. Burgundy has a slogan : The land of good food and good living !
Simard, reknowned village for its high quality meat, delicatessen and Bresse Chicken !
I strongly recommend all our guests to organize a visit to Simard at the begining of your stay with us. Simard (71330) is only about 20 minuts from Lans or Saunières, and about 45 minuts from Mercurey.
Fill up the fridge for the week, you will probably experience then the best barbecues of your life !
Good quality bucthery and delicatessen "craftsmen" are becoming rare nowadays. That's why I thought I should share with you this incredible adress where I go myself once a week !
Simard's Hugonnot Butchery is without doubt one of the most wellknown in the area. They have clients driving over 100kms to come and buy their meat and delicatessen there.
The "House" was founded in 1905 and it is nowadays under the expert hands of the "Hugonnot brothers" : Gérard is the Delicatessen maker and Sylvain the Butcher.
The main specialties are : L'andouillette, le saucisson, les merguez (slightly spicy sausage for barbecue), les chipolatas (sausage for barbecue), le jambon persillé (ham made of 3 different meats with parsley : it is a specialty of Burgundy), le pâté en croûte... and much more.. If you don't know what to take, just mention you want to try the local specialties, or/and have a complete assortment for 3 barbecues for 10 people for example. Sylvain is very friendly and helpful.
The meat comes from "blonde d'Aquitaine" cowtype and is of an exceptionnal quality !
You will also find a selection of local and Jura region cheeses, such as "Comté" or "Morbier".

- On Sunday morning from 8am to 12am.
The Chicken of Bresse is an "appellation controlled" produce and is worldwide known. The "Mairet" company in Simard collects chickens which are breed in local farms in very strict quality conditions, and they prepare them to sell to high quality restaurants and food stores throughout France and Europe.
The Factory has recently open a "desk" where local people can come to buy their chicken. They have a wide range of produces around poultry (turkey, duck..ect) but you should ask at least for a "Bresse Chicken ready to cook" (poulet de bresse prêt à cuire) and if you have children ask for some homemade chicken nuggets !
Open from Monday to Friday 8am to 11.30am and 1.30pm to 5pm, also open on Saturday morning from 8am to 11.30am.
This traditional restaurant is located in a small village. One of their specialty which attracts all the locals is their great “Frogs Legs” deal! The quality to price “ratio” is very good with quality meals for about 20 Euros per person. 5 minutes away from Chateau de Lans.

The « Rue de Strasbourg » in Chalon sur Saône (address for your GPS) is located on an island surrounded by the river Saône. Local people call this street « The restaurants street » because there are no shops but about 30 restaurants one after the other, of all styles. I can recommend personally « Le Clown Gourmand », for their « original » cuisine at good price. Also, worth visiting « Chez Jules » or “le Bourgogne”.

About 1km from Chateau de Mercurey this restaurant is unique in its style; you will jump back 40 years ago and taste the original Burgundy & “Bouchon Lyonnais” specialties homemade with fresh produces and passion.The Chef “Didier” also can cook at Chateau de Mercurey in evenings on request.

This restaurant features one of the most enjoyable outside terraces in the area, it is on the side of the river, sheltered by 200-year-old trees. It has also a particularly good wine card with a few rare top producers. Open in May, June and September every day for lunch and dinner except on Tuesday and Wednesday. In July and August, open every day for lunch and dinner. Closed the rest of the year.
